Summer is on the horizon as we bid adieu to our favorite springtime allium. For those blessed with too much of a good thing, there is an easy way to save your excess ramp bulbs. Simply arrange clean ramp bulbs (the white and purple part of the plant) on a baking sheet and place in a freezer for 24 hours. Once frozen, store bulbs in a freezer bag for up to 12 months. Frozen ramp bulbs can be used the same as frozen onions. They are particularly good roasted, feel free to add frozen bulbs to your favorite sheet pan vegetable recipe.

Triple Ramp Burgers
- Thinly slice 3 – 6 cleaned ramp bulbs and add to a mixing bowl along with 2 pounds of farm-raised Ohio beef;
- Add 1 tablespoon of your favorite Wild Leek Ramp Seasoning blend along with a pinch of salt and pepper;
- Lightly combine the seasonings, ramps and beef, do not overmix;
- Form beef into 8 patties, each roughly 1 inch thick;
- If using a gas grill, preheat grill then reduce heat to medium;
- Grill burgers over medium coals for about 15 minutes, turning once (meat thermometer should read 160 degrees);
- If desired, add a favorite cheese during the last minute of grilling;
- For a triple wild leek wallop, top with Bread and Butter Ramp Pickles;
- Serve with your favorite condiments, then enjoy!
- Ingredients: Fresh ramps, Wild Leek Seasoning Blend, ground beef, salt and pepper.
