Happy Home Opener! Garden Party Spaghetti

Lucky enough to end summer with a bounty of fresh tomatoes? We’ve got you covered with this easy and delicious fresh tomato sauce recipe, served here atop spaghetti squash.

Fresh Tomato Sauce With Roasted Spaghetti Squash

  • Wash and dry 2 pounds of tomatoes (roughly 4 large or 8 – 10 medium tomatoes), arrange on baking sheet;
  • Freeze tomatoes for at least 6 hours;
  • When ready to make the sauce, remove tomatoes from freezer and rinse under warm water;
  • Remove the stems and skins from tomatoes (the warm water should split the skins, making removal fairly easy);
  • Place tomatoes and a pinch of salt in a large pot over medium heat;
  • Add 5 tablespoons of unsalted butter and 1 onion, split in half, to the pot;
  • Bring to a boil and then reduce heat;
  • Simmer uncovered on low for 1 and 1/2 half hours – until fat separates to the top of the sauce;
  • Occasionally stir and crush the tomatoes while simmering;
  • While sauce is simmering, wash 1 spaghetti squash and heat oven to 350 degrees;
  • Split squash lengthwise and scoop seeds from the squash;
  • Rub squash with olive oil and season with salt and pepper;
  • Place on baking sheet, squash side down, and bake for 35 – 40 minutes;
  • To serve spaghetti squash, rake a large fork over the roasted squash to form spaghetti-like strands;
  • Remove onion prior to serving the tomato sauce;
  • Garnish with fresh herbs and enjoy!
  • Note: This tomato sauce freezes well, it may kept in an airtight container in the freezer for one year.
  • Variation: For a vegan tomato sauce, simply replace butter with a plant-based butter substitute.
  • Ingredients: Sauce: Tomatoes, Butter, Onion, Salt. “Spaghetti”: Spaghetti Squash, Olive Oil, Salt and Pepper.
