June is a great month for freshly harvested kohlrabi in Northeast Ohio. Wondering what to do with the funky kohlrabi plants? Looking for a satisfying soup full of Asian flavor, but cannot make it to Superior Avenue? We’ve got you covered with this very easy yet very flavorful Beef and Kohlrabi Stew!
Beef and Kohlrabi Stew
- Lightly oil a large skillet and brown a 2-3 pound bone-in chuck roast on all sides (locally sourced, if possible);
- Remove the tough exteriors from 2 large (or 4 small) kohlrabi, slice the interiors into 2 inch chunks;
- Add the chopped kohlrabi to a slow cooker;
- Place two star anise into a piece of cheesecloth or a tea ball, secure, and add to slow cooker;
- Place browned beef roast on the bed of kohlrabi in the slow cooker;
- Cover the roast with water and add a dash of soy sauce and (optionally) a 1/2 teaspoon of fish sauce;
- Cook the stew on low for 12 hours or on high for 6 hours;
- Remove roast, debone and shred meat, return shredded meat to the slow cooker;
- Serve hot stew with noodles or rice, optional garnishes include cilantro or Thai basil, bean sprouts and sliced jalapeƱos. Enjoy!
