Open Sesame! Easy Tahini Cookies (vegan)

Easy Tahini Cookies

  • Combine 1/4 cup sesame seeds and 2 teaspoons Ravine’s Edge Ohio Maple Sugar (or sugar of your choice) on a plate, set aside;
  • Preheat oven to 375 degrees and line a baking sheet with parchment paper;
  • In a large bowl, whisk 1/4 cup of tahini with 1/4 cup vegetable oil and a 1/2 cup of sugar;
  • Whisk in 1/4 cup beet juice (these cookies feature freshly made beet juice, but orange juice also works nicely in this recipe, or feel free to improvise with your favorite juice);
  • Stir in 1 and 1/4 cups all-purpose flour, a 1/2 teaspoon baking soda and a small pinch of salt;
  • If dough is too dry, add additional juice by the tablespoon and stir to incorporate;
  • Roll a tablespoon of dough into a ball and then roll ball in the sesame seed mixture on the plate, place ball on the baking sheet and flatten slightly (this recipe should make 16 cookies);
  • Bake cookies for 10 – 12 minutes, until bottoms are lightly browned;
  • Cool on a wire rack for at least 5 minutes, then enjoy!
  • Ingredient list: Sesame seeds, sugar, tahini, vegetable oil, fruit juice, all purpose flour, salt and baking soda.
