Wondering what to do with left-over wine from summer celebrations? We’ve got you covered with this quick, yet elegant, zucchini recipe!
Wine-Braised Zucchini
- Slice 1 onion and 1 large (or 2 small) zucchini into julienne slices (a julienne peeler quickly dispatches even large zucchini);
- Melt 3 tablespoons of unsalted butter in a large skillet or pot over medium heat;
- Stir in julienne vegetables, add salt & pepper to taste;
- Mince 2 – 4 cloves of garlic and stir into vegetables;
- Add 1/4 cup of red wine and simmer for 10 – 12 minutes, until wine reduces;
- Remove from heat and garnish as desired – suggested garnishes include finely chopped fresh herbs (basil and parsley pair particularly well with this recipe), grated Parmesan cheese or sliced Kalamata olives;
- Enjoy!
- Note: For a more substantial meal, add grilled portobella mushrooms or pan-fried Lake Erie Walleye or Northeast Ohio beef meatballs.
