Wondering what to do with all of the tempting varieties of summer jams? This recipe works wonderfully with a vast variety of fruit preserves.
Fruity Oatmeal Bars
- Preheat oven to 350 degrees and grease a square baking pan;
- Pulse 1 cup of all-purpose flour, 1/2 cup of Ravine’s Edge Maple Sugar, 1/4 teaspoon baking soda and 1/2 cup of cold, unsalted butter in a food processor until mixture resembles coarse crumbs, then stir in 1 cup of rolled oats into crumb mixture (alternatively: mix 1 cup of all-purpose flour, 1 cup of rolled oats, 1/4 teaspoon baking soda and a 1/2 cup of Ravine’s Edge Maple Sugar in a large bowl, using a pastry cutter – cut 1/2 cup of cold butter into the mixture until it resembles coarse crumbs);
- Set aside a 1/2 cup of the crumb mixture;
- Press the remaining crumb mixture into the greased pan;
- Spread 1 to 1 & 1/2 cups (8 – 12 ounces) of your favorite The Wild Leek fruit jam over the crumb mixture;
- Top with the remaining crumb mixture;
- Bake for 30 – 35 minutes, until the top of the oatmeal bars are golden brown;
- Enjoy!
- Ingredients List: All-Purpose Flour, Rolled Oats, Baking Soda, Sugar, Unsalted Butter, Fruit Jam, Fat (enough oil, butter or shortening to grease one baking pan).
- Note: To make vegan Fruity Oatmeal Bars, simply replace butter with your favorite non-dairy butter substitute.
