Pork & Greens
- Thoroughly wash 3 or 4 large bunches of fresh greens (collards, Swiss chard and kale all work well in this recipe);
- Remove any tough stems and then roughly chop the cleaned greens;
- Place cleaned and chopped greens into a large stock pot (no worries if the pot seems too full, the greens will greatly reduce during cooking);
- Add one finely diced onion to the greens;
- Place a locally-sourced ham hock on the greens and add water until it just barely covers the ham hock;
- Bring to a boil and then reduce heat to low;
- Simmer on low for a minimum of 2 hours – the longer the greens simmer, the richer the broth will be;
- During the last 1/2 hour of cooking add 2 cups of already-cooked small red beans (cooked or canned kidney beans are a good substitute if small red beans are unavailable);
- If desired, serve with rice (or any other preferred grain) and garnish with hot sauce;
