Garden Party Dip
- In a large skillet, sauté 1 large bunch of greens over medium heat, sprinkle 1 teaspoon of your preferred Wild Leek Seasoning Blend over the greens (or, sprinkle greens with a 1/2 teaspoon of Ramp Salt, or, 1 teaspoon of garlic powder and a small pinch of salt);
- Cook greens until wilted (2-3 minutes for spinach, 5-7 minutes for heartier greens such as Swiss chard or kale), then remove from heat;
- Finely dice 1/4 red onion and 1 sweet pepper, add to a large bowl;
- Add 1 cup of Greek yogurt to the large bowl;
- Season yogurt, pepper and onion with fresh squeezed lime (or lemon) juice, 1 tablespoon of your preferred Wild Leek Seasoning Blend (or, 1 teaspoon Ramp Salt, or, 1 tablespoon of garlic powder and a small pinch of salt);
- Fold cooled greens into the yogurt mixture, add a dash of hot sauce and a dash of Worcestershire sauce, adjust seasonings to taste and mix thoroughly;
- Refrigerate dip for at least one hour before serving (overnight works well);
- Serve with crudité, crackers, chips or bread and enjoy!
