Arguably the best weekend of Northeast Ohio’s summer festival season has arrived! The 36th annual Cleveland Irish Cultural Festival runs Friday – Sunday at the Cuyahoga County Fairgrounds.
Irish cuisine reflects the small farms of the rural communities that dot the green countryside. It often features simple fare that highlights local produce. For example, this soup, made from those plentiful summer harvests – zucchini and tomatoes.
The following recipe was adapted from Best of Irish Soups by Eileen O’Driscoll.
Creamy Courgette and Tomato Soup
Over moderate heat, melt one quarter stick of butter in pot.
Add one large, chopped onion and cook for 5 minutes.
Add 1.5 pounds (1 large or 2 medium) chopped courgettes [also known as zucchini], 1 pound (3 medium) chopped ripe tomatoes, and 4 cloves of crushed garlic; cook for 2 minutes.
Add 4 cups of chicken or vegetable broth, cover and simmer for 20 minutes.
If desired, blend soup.
Add 1 cup of cream or half and half, mix well over heat, but do not boil.
If desired, top with garlic croutons.
