Kevin Love also posts his health-conscience meals on social media. He began following a plant-based diet while playing for the Minnesota Timberwolves. On June 12, Richard Jefferson mentioned Kevin Love’s penchant for beets and kale on ESPN’s TrueHoop Presents. “He eats like an 80-year-old lady who’s trying make sure she’s regular.”

Perhaps, but as far as The Wild Leek is aware, women around the country weren’t sharing Mr. Jefferson’s photo this season.

Whether you enjoy your veggies mixed in a sweet fruit smoothie, like Iman Shumpert, or eat mostly plants like Kevin Love, we hope you enjoy this week’s selection. We like to think that even Richard Jefferson would dig our organically-grown beets!

This week’s harvest may include:

Swiss Chard, Dinosaur or Red Russian Kale, Red or Green Cabbage, Snow Peas, Salad Greens,

Onions, Carrots, Beets with greens, Turnips with greens.

Recipes

Grilled Beets

Savory greens and sweet grilled beets are an easy side dish that works well with grilled meats. Easy to prep with little to clean-up, this side is perfect for backyard summer nights.

Place cleaned whole (or sliced) beets, coated in oil, in a foil packet. Add seasoning and ingredients of choice. Grill over medium heat for 30-40 minutes.

Packet Suggestion:

  • 2 Sliced (or 4 baby) beets,
  • 1 onion,
  • 1-3 cloves garlic (to taste),
  • Leafy Greens,
  • olive oil to coat, salt and pepper.

Variation:

Leftover grilled beets are a fantastic addition to fried potatoes; together they form the Wine and Gold of hash browns!
